Spinach Pesto Gnocchi with Crispy Bacon
This Spinach Pesto Gnocchi with Crispy Bacon includes a home-made pesto which is super easy to make and helps elevate the gnocchi dish.

Ingredients
- 500g gnocchi
- 200g bacon, sliced into bite-size pieces
- 2 cups fresh spinach leaves
- 1/2 cup fresh basil leaves
- 1/3 cup grated Parmesan cheese
- 1/4 cup pine nuts or walnuts
- 2 cloves garlic, peeled
- 1/2 cup extra-virgin olive oil
Instructions
- In a blender, combine the spinach leaves, basil leaves, Parmesan cheese, nuts, and garlic. Pulse until the ingredients are coarsely chopped. Gradually add the olive oil until the mixture is smooth and creamy. Season with salt and pepper to taste. Set aside.
- Bring a large pan of salted water to a boil. Add the gnocchi and cook according to the package instructions.
- In a pan, cook the bacon over medium heat until crispy.
- In the same pan, add the cooked gnocchi and stir in the spinach pesto until the gnocchi are well coated.
- Garnish with additional grated Parmesan cheese, a few pine nuts and fresh basil leaves.
