Pea and Mint Soup

A simple Pea and Mint Soup for any night of the week.

Ingredients

  • 3 cups of frozen peas
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1/4 cup of fresh mint leaves, plus extra for garnish
  • 2 tbsp of olive oil
  • 1/4 cup of coconut milk
  • mint leaves, for garnish

Instructions

  1. In a medium-sized pan, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  2. Add the frozen peas to the pan and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and simmer for about 5 minutes, or until the peas are tender but still bright green.
  3. Remove the pan from the heat. Add the fresh mint leaves to the soup. The residual heat will wilt the mint perfectly.
  4. Using a blender, blend the soup until it reaches your desired consistency.
  5. Season the soup with salt and black pepper to taste. Stir in the coconut milk for added creaminess.
  6. Serve the soup with a few mint leaves. Alternatively, let the soup cool and then refrigerate to serve chilled, perfect for warmer weather.
