Pea and Mint Soup
A simple Pea and Mint Soup for any night of the week.

Ingredients
- 3 cups of frozen peas
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1/4 cup of fresh mint leaves, plus extra for garnish
- 2 tbsp of olive oil
- 1/4 cup of coconut milk
- mint leaves, for garnish
Instructions
- In a medium-sized pan, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.
- Add the frozen peas to the pan and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and simmer for about 5 minutes, or until the peas are tender but still bright green.
- Remove the pan from the heat. Add the fresh mint leaves to the soup. The residual heat will wilt the mint perfectly.
- Using a blender, blend the soup until it reaches your desired consistency.
- Season the soup with salt and black pepper to taste. Stir in the coconut milk for added creaminess.
- Serve the soup with a few mint leaves. Alternatively, let the soup cool and then refrigerate to serve chilled, perfect for warmer weather.
