Garlic-Lemon Salmon Pasta

Ingredients
- 2 salmon fillets
- 1 tbsp olive oil
- 200g spaghetti or your favourite pasta
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- zest and juice of 1 lemon
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for serving
- 1 tbsp capers, drained
- fresh dill, chopped, for garnish
- extra lemon slices, for serving
Instructions
- In a pan over medium-high heat, heat the olive oil and cook the salmon skin-side down for about 4-5 minutes until the skin is crispy. Flip and cook for another 3-4 minutes or until desired doneness. Remove from the pan and set aside.
- Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In the same pan used for salmon, melt the butter over medium heat and add the minced garlic and cook until fragrant, about 1 minute.
- Stir in the lemon zest and juice, heavy cream, and a pinch of salt and pepper. Let it simmer for a couple of minutes to slightly thicken.
- Add the cooked pasta to the pan with the lemon-garlic sauce. If the sauce is too thick, add a little reserved pasta water.
- Stir in the grated Parmesan cheese and capers until well mixed and the pasta is evenly coated with the sauce.
- Flake the cooked salmon and gently fold it into the pasta or place it on top of the pasta when serving. Garnish with fresh dill, extra Parmesan cheese, and lemon slices.
