Veggie Fajitas
I love a Chicken Fajita, but sometimes when time is against you, these Veggie Fajitas are the perfect alternative for a quick and tasty meal.

Ingredients
- 2 bell peppers, sliced
- 1 red onion, sliced
- 2 cups mushrooms, sliced
- 2 tbsp olive oil
- plain tortillas
- 1 tsp chilli powder
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp dried oregano
- sour cream
- grated cheese
- lime wedges
- salt and black pepper
Instructions
- In a small bowl, combine all the fajita seasoning ingredients: chilli powder, paprika, cumin, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix well to combine.
- In a large pan, heat olive oil over medium-high heat and add the sliced bell peppers, red onion, and mushrooms.
- Sprinkle the homemade fajita seasoning over the vegetables.
- Sauté the vegetables for 5 minutes, stirring occasionally, until they are tender-crisp and slightly caramelised.
- While the vegetables are cooking, warm the flour tortillas.
- Once the vegetables are cooked, spoon them onto the warmed tortillas and serve the sour cream, grated cheese and lime wedges.
