Left-over Chicken Caesar Salad
I love using leftovers from a roast dinner, so this Left-over Chicken Caesar Salad is the perfect simple meal to add to your midweek lineup.

Ingredients
- leftover roast chicken, shredded or cut into bite-sized pieces
- 1 large head of romaine lettuce, washed and torn into bite-sized pieces
- 1/2 cup grated Parmesan cheese
- 2 anchovy fillets, minced
- 2 slices of bread, cut into 2cm cubes
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp Worcestershire sauce
- 1 tsp Dijon mustard
- salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, toss the bread cubes with olive oil, garlic powder, salt, and pepper until evenly coated.
- Spread the bread cubes on a baking sheet in a single layer and bake for 10 minutes or until golden and crispy, turning halfway through.
- In a small bowl, make your Caesar dressing. Whisk together the mayonnaise, minced garlic, lemon juice, Worcestershire sauce, Dijon mustard, and 1/4 cup of Parmesan cheese. Season with salt and pepper to taste, adjust the seasoning and consistency according to your preference, adding a little water if the dressing is too thick.
- In a large salad bowl, combine the romaine lettuce, shredded roast chicken, and homemade croutons.
- Drizzle with the Caesar dressing and toss until everything is well coated.
- Sprinkle the remaining Parmesan cheese and minced anchovies over the top and serve.
