Left-over Chicken Caesar Salad

I love using leftovers from a roast dinner, so this Left-over Chicken Caesar Salad is the perfect simple meal to add to your midweek lineup.

Ingredients

  • leftover roast chicken, shredded or cut into bite-sized pieces
  • 1 large head of romaine lettuce, washed and torn into bite-sized pieces
  • 1/2 cup grated Parmesan cheese
  • 2 anchovy fillets, minced
  • 2 slices of bread, cut into 2cm cubes
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, toss the bread cubes with olive oil, garlic powder, salt, and pepper until evenly coated.
  3. Spread the bread cubes on a baking sheet in a single layer and bake for 10 minutes or until golden and crispy, turning halfway through.
  4. In a small bowl, make your Caesar dressing. Whisk together the mayonnaise, minced garlic, lemon juice, Worcestershire sauce, Dijon mustard, and 1/4 cup of Parmesan cheese. Season with salt and pepper to taste, adjust the seasoning and consistency according to your preference, adding a little water if the dressing is too thick.
  5. In a large salad bowl, combine the romaine lettuce, shredded roast chicken, and homemade croutons.
  6. Drizzle with the Caesar dressing and toss until everything is well coated.
  7. Sprinkle the remaining Parmesan cheese and minced anchovies over the top and serve.
