Chorizo Paella

Chorizo Paella

Add some Spanish flavour to your life with this really easy Chorizo Paella. If you’ve got more time, why not add some chicken in as well.

Ingredients

  • 2 cups precooked white rice
  • 1 cup chorizo, diced
  • 1/2 cup frozen peas
  • 1/2 cup diced bell peppers
  • 1 cup chicken stock
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup canned chopped tomatoes, drained
  • 1/2 tsp turmeric
  • 1 tbsp smoked paprika
  • Lemon wedges for serving
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the precooked rice according to the package instructions.
  2. In a large pan, heat olive oil over medium heat. Add the sliced chorizo and cook for 2 minutes, until it starts to brown and release its oils.
  3. Add the onion and garlic to the pan and sauté until soft and fragrant.
  4. Add the diced bell peppers and cook for another 2-3 minutes until they start to soften.
  5. Stir in the chicken stock, chopped tomatoes, turmeric and smoked paprika. Mix well and simmer for 2 minutes.
  6. Add the precooked rice to the pan, mixing thoroughly to combine all the ingredients and ensure the rice is evenly coated with the spices.
  7. Mix in the peas and cook for another 2-3 minutes, just until everything is heated through. Season with salt and pepper to taste.
  8. Serve the paella with fresh parsley and lemon wedges on the side.
