Simple Sweet Potato Soup

A warming Sweet Potato Soup that can be ready in minutes and enjoyed by everyone.

Ingredients

  • 1 large sweet potato, peeled and diced
  • 2 cups vegetable stock
  • 1/2 cup coconut milk
  • 1 tbsp fresh ginger, minced
  • 1/2 tsp ground cinnamon
  • 1/2 tsp chilli flakes, for garnish
  • 1/2 tsp pumpkin seeds, for garnish

Instructions

  1. Microwave the diced sweet potato in a covered microwave-safe bowl with a bit of water for about 5 minutes, or until soft.
  2. In a blender, combine the softened sweet potato, vegetable stock, coconut milk, ginger, and cinnamon. Blend until smooth.
  3. Pour the blended soup mixture into a pot and warm over medium heat for about 3-5 minutes, stirring occasionally. Adjust the seasoning with salt and pepper to your taste.
  4. Once heated through, ladle the soup into bowls. Top with pumpkin seeds and chilli flakes, for added texture and flavour.
