Lemon Garlic Salmon with Couscous

This quick and flavourful Lemon Garlic Salmon with Couscous pairs tender, pan-seared salmon with fluffy, lemon-infused couscous.

Ingredients

  • 4 salmon fillets
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 lemon, sliced into thin rounds
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 cup couscous
  • 1 ¼ cups vegetable stock
  • 1 tbsp olive oil or butter
  • ¼ cup fresh parsley, chopped

Instructions

  1. In a medium saucepan, bring vegetable stock to a boil.
  2. Stir in the couscous and olive oil. Remove from heat, cover, and let it sit for 5 minutes.
  3. Fluff the couscous with a fork and mix in lemon zest, lemon juice, fresh parsley, salt, and pepper. Set aside.
  4. Heat olive oil in a large pan over medium-high heat.
  5. Season the salmon fillets with salt, pepper, and dried oregano.
  6. Place salmon in the pan, skin-side down and cook for 3-4 minutes until golden. Flip and cook for an additional 2-3 minutes.
  7. Add minced garlic, fresh lemon juice, and lemon slices to the pan for the last 1-2 minutes of cooking. Baste the salmon with the pan juices.
  8. Divide the lemon couscous evenly onto plates.
  9. Top with the pan-seared salmon. Drizzle with any remaining lemon-garlic juices from the pan.
  10. Garnish with fresh parsley and a lemon wedge.
