Lemon Garlic Salmon with Couscous

Ingredients
- 4 salmon fillets
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 lemon, sliced into thin rounds
- 1 tbsp fresh lemon juice
- 1 tsp dried oregano
- 1 cup couscous
- 1 ¼ cups vegetable stock
- 1 tbsp olive oil or butter
- ¼ cup fresh parsley, chopped
Instructions
- In a medium saucepan, bring vegetable stock to a boil.
- Stir in the couscous and olive oil. Remove from heat, cover, and let it sit for 5 minutes.
- Fluff the couscous with a fork and mix in lemon zest, lemon juice, fresh parsley, salt, and pepper. Set aside.
- Heat olive oil in a large pan over medium-high heat.
- Season the salmon fillets with salt, pepper, and dried oregano.
- Place salmon in the pan, skin-side down and cook for 3-4 minutes until golden. Flip and cook for an additional 2-3 minutes.
- Add minced garlic, fresh lemon juice, and lemon slices to the pan for the last 1-2 minutes of cooking. Baste the salmon with the pan juices.
- Divide the lemon couscous evenly onto plates.
- Top with the pan-seared salmon. Drizzle with any remaining lemon-garlic juices from the pan.
- Garnish with fresh parsley and a lemon wedge.
