Greek Chicken Gyro Bowls

Ingredients
- 2 chicken breast, cut into bite-sized pieces
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp paprika
- juice of ½ a lemon
- 1 pack microwave rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ½ cup kalamata olives, pitted and halved
- ½ cup feta cheese, crumbled
- 1 cup baby spinach
- tzatziki sauce
Instructions
- Heat olive oil in a large pan over medium-high heat.
- Add the chicken, minced garlic, oregano, cumin, paprika, lemon juice, salt, and pepper.
- Cook for 6-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Set aside.
- Microwave the rice.
- In a bowl, start with a base of cooked rice.
- Layer with baby spinach, tomatoes, cucumber, red onion, olives, and crumbled feta.
- Top with the cooked chicken.
- Spoon the tzatziki sauce over the bowls.
