Lemon and Pesto Gnocchi

For me, this Lemon and Pesto Gnocchi is the ultimate comfort food, and all ready in under 10 minutes!

Ingredients

  • 300g pack of gnocchi
  • 100g frozen peas
  • 70g baby spinach
  • 4 tbsp fresh pesto
  • 3 tbsp crème fraîche
  • zest of 1 lemon
  • juice of ½ lemon
  • 2 tbsp pine nuts

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions.
  2. In a dry skillet, toast the pine nuts over medium heat until golden and fragrant, about 3-5 minutes. Stir frequently to prevent burning and then set aside.
  3. Two minutes before the gnocchi are done, add the peas and spinach to a pan.
  4. Once the spinach has wilted, mix in the fresh pesto, crème fraîche, lemon juice and heat through gently.
  5. Transfer the gnocchi using a slotted spoon into the pan and mix until well combined with the creamy sauce.
  6. Taste and adjust seasoning with salt and pepper if necessary.
  7. Serve with a sprinkle of toasted pine nuts and lemon zest.
