Spicy Chorizo and Egg Tacos

Ingredients
- 4 small tortillas
- 200g chorizo sausage, casings removed
- 4 large eggs
- 1 tbsp olive oil
- ½ cup grated cheese (cheddar, Monterey Jack, or cotija)
- 1 avocado, diced or sliced
- ½ cup pico de gallo or salsa
- fresh coriander leaves, for garnish
- 1 lime, wedges
Instructions
- Heat a pan over medium-high heat. Add the chorizo, breaking it up with a spoon as it cooks.
- Cook for about 4-5 minutes until browned and fully cooked through. Transfer to a plate and keep warm.
- In a bowl, whisk the eggs, salt, and pepper.
- Reduce the pan heat to medium and add a drizzle of olive oil if needed.
- Pour in the eggs and cook gently, stirring with a spatula, until soft and fluffy (2-3 minutes). Remove from heat.
- Heat the tortillas in a dry pan for about 30 seconds per side, or microwave them.
- Divide the scrambled eggs and chorizo evenly among the tortillas.
- Top each taco with grated cheese, diced avocado, pico de gallo or salsa, and fresh coriander.
- Serve with lime wedges.
