Vietnamese Banh Mi Bowls
This recipe takes the classic flavours of a Banh Mi sandwich and transforms them into quick Vietnamese Banh Mi Bowls that are ready in 10 minutes!

Ingredients
- 1 pack microwave rice
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1 cup shredded radish
- ½ cup fresh coriander leaves
- 2 spring onions, thinly sliced
- ¼ cup roasted peanuts
- 400g minced pork, chicken, or tofu
- 2 garlic cloves, minced
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp sesame oil
- 1 tsp sugar or honey
- ½ tsp black pepper
- ½ cup rice vinegar
- ½ cup water
- 1 tbsp sugar
- ½ tsp salt
- ¼ cup mayo
- 1 tbsp Sriracha
- 1 tsp lime juice
Instructions
- Combine rice vinegar, water, sugar, and salt in a bowl.
- Add shredded carrots and radish. Let them pickle while you prepare the rest of the dish.
- Heat sesame oil in a pan over medium heat.
- Add minced pork (or chicken/tofu) and cook for 5-7 minutes, breaking it into small crumbles.
- Add garlic, soy sauce, fish sauce, sugar/honey, and black pepper. Cook for 2-3 more minutes until well combined.
- In a small bowl, whisk together mayo, Sriracha, and lime juice. Set aside.
- Cook the microwave rice, then add to a bowl.
- Layer the rice bowl with shredded carrots, cucumber slices, pickled veggies and your cooked protein.
- Drizzle with the Sriracha mayo and sprinkle with spring onions, coriander, and roasted peanuts for garnish.
