Tuscan Garlic Chicken Wraps

Ingredients

  • 2 chicken breasts, thinly sliced
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tsp Italian seasoning
  • ½ tsp paprika
  • 4 large flour tortillas
  • 1 cup baby spinach or arugula
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup grated Parmesan cheese
  • ½ red onion, thinly sliced
  • ½ cup mayonnaise
  • 2 tbsp plain Greek yogurt
  • 1 tbsp olive oil
  • 1 lemon

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add sliced chicken and season with garlic, Italian seasoning, paprika, salt, and pepper.
  3. Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly golden. Remove from heat and set aside.
  4. In a small bowl, whisk together mayonnaise, Greek yoghurt, olive oil, lemon juice, Parmesan cheese, Italian seasoning, salt, and pepper. Set aside.
  5. Lay a tortilla flat and spread 1-2 tablespoons of the Tuscan dressing over it.
  6. Layer spinach, sun-dried tomatoes, sliced red onion, grated Parmesan, and cooked chicken on top.
  7. Fold the sides of the tortilla inward, then roll it tightly from the bottom up to form a wrap.
