Ingredients

  • 4 large bell peppers
  • 300g minced beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 2 tbsp taco seasoning
  • 1 cup cooked rice
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned diced tomatoes
  • 1 cup grated cheese
  • sour cream
  • chopped fresh coriander
  • sliced jalapeños
  • salsa

Instructions

  1. Preheat the air fryer to 190°C.
  2. Halve the bell peppers and remove the seeds. Lightly brush the insides with olive oil and season with salt and pepper.
  3. Place the bell peppers in the air fryer basket, ensuring they are in a single layer. 
  4. Heat olive oil in a pan over medium heat. Add diced onion and garlic, sautéing until softened. Add the minced beef and cook until browned, breaking it up with a spoon.
  5. Stir in taco seasoning, black beans, diced tomatoes, and cooked rice. Season with additional salt and pepper to taste. 
  6. Remove the peppers from the air fryer and fill each half with the taco mixture, pressing it down slightly to pack it in. Top each stuffed pepper with grated cheese.
  7. Cook for 2-3 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  8. Remove the stuffed peppers from the air fryer and garnish with your favourite toppings like sour cream, coriander, jalapeños, avocado, or salsa.
