Taco-Stuffed Bell Peppers

Ingredients
- 4 large bell peppers
- 300g minced beef
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 2 tbsp taco seasoning
- 1 cup cooked rice
- 1 cup canned black beans, drained and rinsed
- 1 cup canned diced tomatoes
- 1 cup grated cheese
- sour cream
- chopped fresh coriander
- sliced jalapeños
- salsa
Instructions
- Preheat the air fryer to 190°C.
- Halve the bell peppers and remove the seeds. Lightly brush the insides with olive oil and season with salt and pepper.
- Place the bell peppers in the air fryer basket, ensuring they are in a single layer.
- Heat olive oil in a pan over medium heat. Add diced onion and garlic, sautéing until softened. Add the minced beef and cook until browned, breaking it up with a spoon.
- Stir in taco seasoning, black beans, diced tomatoes, and cooked rice. Season with additional salt and pepper to taste.
- Remove the peppers from the air fryer and fill each half with the taco mixture, pressing it down slightly to pack it in. Top each stuffed pepper with grated cheese.
- Cook for 2-3 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Remove the stuffed peppers from the air fryer and garnish with your favourite toppings like sour cream, coriander, jalapeños, avocado, or salsa.
