BBQ Chickpea Salad

Try this really easy BBQ Chickpea Salad for a great midweek meal full of healthy vegetables and with a classic BBQ flavour.

Ingredients

  • 400g chickpeas, drained and rinsed
  • 2 tbsp barbecue sauce
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, sliced
  • ½ red onion, thinly sliced
  • 1 avocado, diced
  • ¼ cup sweetcorn
  • ¼ cup grated cheese
  • 2 tbsp fresh coriander, chopped
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard

Instructions

  1. Heat a non-stick pan over medium heat. Add the chickpeas and barbecue sauce, stirring to coat. Cook for 3-4 minutes until the chickpeas are warmed and the sauce thickens slightly. Set aside to cool slightly.
  2. In a large bowl or platter, layer the mixed greens, cherry tomatoes, cucumber, red onion, sweetcorn, and avocado.
  3. Spoon the BBQ chickpeas over the salad. Sprinkle with grated cheese and fresh coriander.
  4. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
  5. Drizzle the dressing over the salad and toss gently to combine.
