BBQ Chickpea Salad
Try this really easy BBQ Chickpea Salad for a great midweek meal full of healthy vegetables and with a classic BBQ flavour.

Ingredients
- 400g chickpeas, drained and rinsed
- 2 tbsp barbecue sauce
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 small cucumber, sliced
- ½ red onion, thinly sliced
- 1 avocado, diced
- ¼ cup sweetcorn
- ¼ cup grated cheese
- 2 tbsp fresh coriander, chopped
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
Instructions
- Heat a non-stick pan over medium heat. Add the chickpeas and barbecue sauce, stirring to coat. Cook for 3-4 minutes until the chickpeas are warmed and the sauce thickens slightly. Set aside to cool slightly.
- In a large bowl or platter, layer the mixed greens, cherry tomatoes, cucumber, red onion, sweetcorn, and avocado.
- Spoon the BBQ chickpeas over the salad. Sprinkle with grated cheese and fresh coriander.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss gently to combine.
