Smoked Salmon and Cream Cheese Quesadilla

Ingredients

  • 2 large flour tortillas
  • 100g smoked salmon
  • 100g cream cheese
  • 1 tbsp capers
  • 2 tbsp fresh dill, chopped
  • 1 spring onion, finely sliced
  • 1 tbsp olive oil
  • 1 lemon

Instructions

  1. In a small bowl, mix the cream cheese with fresh dill, spring onion, salt, and pepper. Stir until smooth and well combined.
  2. Spread the cream cheese mixture evenly over one tortilla.
  3. Layer the smoked salmon on top of the cream cheese. Sprinkle on some capers.
  4. Place the second tortilla on top, pressing gently to seal.
  5. Heat olive oil or butter in a large pan over medium heat. Place the quesadilla in the pan and cook for 2-3 minutes on each side or until golden brown and crispy.
  6. Remove the quesadilla from the pan and let it cool slightly. Slice into wedges and serve with lemon wedges on the side.
