Smoked Salmon and Cream Cheese Quesadilla

Ingredients
- 2 large flour tortillas
- 100g smoked salmon
- 100g cream cheese
- 1 tbsp capers
- 2 tbsp fresh dill, chopped
- 1 spring onion, finely sliced
- 1 tbsp olive oil
- 1 lemon
Instructions
- In a small bowl, mix the cream cheese with fresh dill, spring onion, salt, and pepper. Stir until smooth and well combined.
- Spread the cream cheese mixture evenly over one tortilla.
- Layer the smoked salmon on top of the cream cheese. Sprinkle on some capers.
- Place the second tortilla on top, pressing gently to seal.
- Heat olive oil or butter in a large pan over medium heat. Place the quesadilla in the pan and cook for 2-3 minutes on each side or until golden brown and crispy.
- Remove the quesadilla from the pan and let it cool slightly. Slice into wedges and serve with lemon wedges on the side.
