Simple Chicken Chow Mein

Ingredients

  • 200g chicken breast
  • 200g chow mein or egg noodles
  • 2 tbsp vegetable oil
  • 1 bell pepper, thinly sliced
  • 1 carrot, sliced
  • 1 small onion, thinly sliced
  • 2 spring onions, sliced
  • 2-3 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • sesame seeds, for garnish

Instructions

  1. Prepare the noodles according to package instructions. 
  2. In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chicken and season lightly with salt and pepper. 
  3. Stir-fry for 4-5 minutes until the chicken is cooked through. 
  4. In the same pan, add the remaining 1 tablespoon of oil. Add the bell pepper, carrot, and onion, and stir-fry for 3 minutes until the vegetables are tender-crisp. Add the minced garlic and cook for another 30 seconds.
  5. Add the cooked noodles, soy sauce, oyster sauce, and hoisin sauce. Toss everything together until the noodles and chicken are well coated in the sauce. 
  6. Drizzle with sesame oil and garnish with sliced spring onions and sesame seeds.
