Simple Chicken Chow Mein

Ingredients
- 200g chicken breast
- 200g chow mein or egg noodles
- 2 tbsp vegetable oil
- 1 bell pepper, thinly sliced
- 1 carrot, sliced
- 1 small onion, thinly sliced
- 2 spring onions, sliced
- 2-3 garlic cloves, minced
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1 tsp sesame oil
- sesame seeds, for garnish
Instructions
- Prepare the noodles according to package instructions.
- In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chicken and season lightly with salt and pepper.
- Stir-fry for 4-5 minutes until the chicken is cooked through.
- In the same pan, add the remaining 1 tablespoon of oil. Add the bell pepper, carrot, and onion, and stir-fry for 3 minutes until the vegetables are tender-crisp. Add the minced garlic and cook for another 30 seconds.
- Add the cooked noodles, soy sauce, oyster sauce, and hoisin sauce. Toss everything together until the noodles and chicken are well coated in the sauce.
- Drizzle with sesame oil and garnish with sliced spring onions and sesame seeds.
