Sweet Chilli Turkey Noodles

Ingredients
- 200g turkey mince
- 200g egg noodles
- 1 tbsp vegetable oil
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned or thinly sliced
- 2 spring onions, sliced
- 2 garlic cloves, minced
- 1 tbsp ginger, minced
- 3 tbsp sweet chilli sauce
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp sesame seeds
- fresh coriander, chopped
Instructions
- Prepare the noodles according to package instructions.
- Heat the vegetable oil in a large pan or wok over medium heat. Add the minced turkey and cook for 4-5 minutes, breaking it up with a spoon, until browned and cooked through.
- To the pan with the turkey, add the white parts of the spring onions, red bell pepper, carrot, garlic, and ginger. Sauté for 3 minutes until the vegetables are tender-crisp.
- Stir in the sweet chilli sauce, soy sauce, and rice vinegar. Mix everything well, coating the turkey and vegetables with the sauce. Cook for another minute.
- Add the cooked noodles to the pan and toss everything together. Drizzle with sesame oil and toss until the noodles are well coated.
- Divide the noodles into bowls and garnish with the green parts of the spring onions, sesame seeds, and fresh coriander.
