Sweet Chilli Turkey Noodles

Ingredients

  • 200g turkey mince
  • 200g egg noodles
  • 1 tbsp vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned or thinly sliced
  • 2 spring onions, sliced
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 3 tbsp sweet chilli sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp sesame seeds
  • fresh coriander, chopped

Instructions

  1. Prepare the noodles according to package instructions.
  2. Heat the vegetable oil in a large pan or wok over medium heat. Add the minced turkey and cook for 4-5 minutes, breaking it up with a spoon, until browned and cooked through.
  3. To the pan with the turkey, add the white parts of the spring onions, red bell pepper, carrot, garlic, and ginger. Sauté for 3 minutes until the vegetables are tender-crisp.
  4. Stir in the sweet chilli sauce, soy sauce, and rice vinegar. Mix everything well, coating the turkey and vegetables with the sauce. Cook for another minute.
  5. Add the cooked noodles to the pan and toss everything together. Drizzle with sesame oil and toss until the noodles are well coated.
  6. Divide the noodles into bowls and garnish with the green parts of the spring onions, sesame seeds, and fresh coriander.
