Ingredients
- 6 boneless, skinless chicken thighs, cut into strips
- 200g penne pasta
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 tbsp butter
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 garlic cloves, minced
- 1 cup heavy cream
- ½ cup chicken stock
- ½ cup grated Parmesan cheese
- fresh parsley, for garnish
Instructions
- Bring a large pot of salted water to a boil, add the pasta, and cook until al dente according to package instructions.
- Season the chicken thigh strips with Cajun seasoning, salt, and pepper. Heat olive oil in a large pan over medium heat, then add the seasoned chicken thighs. Cook for 6 minutes, or until browned and cooked through.
- In the same pan, add butter, then the red and yellow bell peppers. Sauté for 2 minutes until the peppers are tender. Add the minced garlic and cook for another 30 seconds until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine with the sautéed peppers. Bring the sauce to a gentle simmer, then add the Parmesan cheese. Stir until the cheese melts, making the sauce creamy and smooth.
- Add the cooked pasta and chicken thighs back into the pan. Toss everything together, ensuring the pasta and chicken are well-coated with the sauce.
- Garnish with fresh parsley and extra Parmesan.
