Ingredients

  • 6 boneless, skinless chicken thighs, cut into strips
  • 200g penne pasta
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup chicken stock
  • ½ cup grated Parmesan cheese
  • fresh parsley, for garnish

Instructions

  1. Bring a large pot of salted water to a boil, add the pasta, and cook until al dente according to package instructions.
  2. Season the chicken thigh strips with Cajun seasoning, salt, and pepper. Heat olive oil in a large pan over medium heat, then add the seasoned chicken thighs. Cook for 6 minutes, or until browned and cooked through.
  3. In the same pan, add butter, then the red and yellow bell peppers. Sauté for 2 minutes until the peppers are tender. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Pour in the heavy cream and chicken broth, stirring to combine with the sautéed peppers. Bring the sauce to a gentle simmer, then add the Parmesan cheese. Stir until the cheese melts, making the sauce creamy and smooth.
  5. Add the cooked pasta and chicken thighs back into the pan. Toss everything together, ensuring the pasta and chicken are well-coated with the sauce.
  6. Garnish with fresh parsley and extra Parmesan.
