Ingredients
- 1 can chickpeas, drained and rinsed
- 1 ripe avocado
- 2 tbsp pesto
- 1 cup cherry tomatoes, halved
- ½ cucumber, diced
- ¼ red onion, finely chopped
- 1 lemon
- fresh basil leaves, for garnish
Instructions
- In a large mixing bowl, scoop out the flesh of the ripe avocado. Mash it well until smooth and creamy.
- Add the pesto and lemon juice, and mix until fully combined. Season with salt and pepper to taste.
- Add the drained chickpeas, halved cherry tomatoes, diced cucumber, and finely chopped red onion to the avocado pesto mixture. Toss everything gently to coat all the ingredients evenly.
- Transfer the salad to a serving dish and garnish with fresh basil leaves.
- Add any optional toppings like crumbled feta or chopped nuts.
