Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 ripe avocado
  • 2 tbsp pesto
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, finely chopped
  • 1 lemon
  • fresh basil leaves, for garnish

Instructions

  1. In a large mixing bowl, scoop out the flesh of the ripe avocado. Mash it well until smooth and creamy.
  2. Add the pesto and lemon juice, and mix until fully combined. Season with salt and pepper to taste.
  3. Add the drained chickpeas, halved cherry tomatoes, diced cucumber, and finely chopped red onion to the avocado pesto mixture. Toss everything gently to coat all the ingredients evenly.
  4. Transfer the salad to a serving dish and garnish with fresh basil leaves. 
  5. Add any optional toppings like crumbled feta or chopped nuts.
