BBQ Cauliflower Tacos

Ingredients
- 1 head of cauliflower, cut into bite-sized florets
- 1 cup BBQ sauce
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 8 small tortillas
- 1 cup shredded cabbage
- fresh coriander, chopped, for garnish
- 1 lime, cut into wedges
Instructions
- Preheat the air fryer to 190°C.
- In a large mixing bowl, toss the cauliflower florets with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
- Add the BBQ sauce and toss again to coat the florets thoroughly.
- Place the cauliflower florets in a single layer in the air fryer basket.
- Cook for 7-9 minutes, shaking the basket halfway through, until the cauliflower is crispy.
- While the cauliflower is cooking, warm the tortillas in a dry pan.
- Fill each tortilla with a generous amount of BBQ cauliflower, shredded cabbage, and any additional toppings you like.
- Garnish with fresh coriander and serve with lime wedges on the side.
