Ingredients
- 500g potato gnocchi
- 200g mushrooms, sliced
- 3-4 garlic cloves, minced
- fresh sage leaves
- 3 tbsp butter (or olive oil)
- ½ cup grated Parmesan cheese
- 1 lemon
Instructions
- Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions (usually about 2-3 minutes until they float).
- In a large pan, melt 2 tablespoons of butter (or olive oil) over medium heat. Add the sliced mushrooms and cook for 5-6 minutes until they are golden brown and softened, stirring occasionally.
- Once the mushrooms are browned, add the minced garlic and sage leaves to the pan. Cook for 1-2 minutes until the garlic is fragrant and the sage leaves are crispy.
- Add the cooked gnocchi to the pan with the mushrooms, garlic, and sage. Add the remaining 1 tablespoon of butter, and toss everything together gently until the gnocchi is lightly browned and coated in the garlic butter sauce. Season with salt and freshly ground black pepper to taste.
- Squeeze a little lemon juice over the gnocchi and sprinkle with grated Parmesan cheese. Toss gently to combine.
