Turkey Gnocchi Bolognese
Rich and delicious, this Turkey Gnocchi Bolognese is one of my absolute favourites for an easy meal.

Ingredients
- 500g minced turkey
- 500g gnocchi
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 can chopped tomatoes
- 2 tbsp tomato paste
- 1/2 cup chicken or vegetable stock
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp thyme
- 2 tbsp olive oil
- fresh parsley or basil, chopped
- grated Parmesan cheese
Instructions
- Bring a large pot of salted water to a boil. Cook the gnocchi according to the package instructions (usually 2-3 minutes until they float).
- In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until softened, about 2 minutes. Add the minced garlic and cook for another minute.
- Push the onions to the side of the pan and add another tablespoon of olive oil. Add the minced turkey, breaking it up with a spoon, and cook until browned, about 5 minutes.
- Stir in the tomato paste, chopped tomatoes, chicken stock, oregano, basil, thyme, salt, and pepper. Mix well and bring the sauce to a simmer.
- Add the cooked gnocchi to the pan and gently toss them in the Bolognese sauce until they are well coated.
- Garnish with fresh parsley or basil and a sprinkle of Parmesan cheese.
