Peanut Butter Ramen

Ingredients

  • 1 pack instant ramen noodles
  • 1 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 tsp chilli flakes 
  • 1 tsp sesame oil
  • 1/2 cup grated carrot
  • 1/2 cup sliced cucumber
  • 1 spring onion, chopped
  • crushed peanuts
  • 1 lime

Instructions

  1. Bring 2 cups of water to a boil. Add the ramen noodles and cook according to package instructions (about 3 minutes).
  2. In a small bowl, whisk together the peanut butter, soy sauce, honey, sesame oil, and chilli flakes. 
  3. Add a tablespoon or two of hot water to thin out the sauce if needed.
  4. In a large bowl, toss the cooked ramen noodles with the peanut sauce until well coated.
  5. Top with grated carrots, sliced cucumber, and chopped spring onions.
  6. Sprinkle crushed peanuts over the top and serve with a wedge of lime.
