Peanut Butter Ramen

Ingredients
- 1 pack instant ramen noodles
- 1 tbsp peanut butter
- 1 tbsp soy sauce
- 1 tsp honey
- 1 tsp chilli flakes
- 1 tsp sesame oil
- 1/2 cup grated carrot
- 1/2 cup sliced cucumber
- 1 spring onion, chopped
- crushed peanuts
- 1 lime
Instructions
- Bring 2 cups of water to a boil. Add the ramen noodles and cook according to package instructions (about 3 minutes).
- In a small bowl, whisk together the peanut butter, soy sauce, honey, sesame oil, and chilli flakes.
- Add a tablespoon or two of hot water to thin out the sauce if needed.
- In a large bowl, toss the cooked ramen noodles with the peanut sauce until well coated.
- Top with grated carrots, sliced cucumber, and chopped spring onions.
- Sprinkle crushed peanuts over the top and serve with a wedge of lime.
