Prawn Jambalaya

It doesn’t get much easier than a Prawn Jambalaya. Perfect for a quick meal or a date night.

Ingredients

  • 1 sweet pointed pepper, finely chopped
  • 300g long-grain rice
  • 200g king prawns
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • 20g garlic paste
  • 1/2 tsp turmeric
  • 2 tsp smoked paprika
  • 100g peas
  • 1 lemon

Instructions

  1. Start by cooking your rice in a saucepan.
  2. Whilst the rice is cooking, sauté the sweet pointed pepper in a pan with a bit of oil over medium heat until soft and then stir in the roasted garlic paste
  3. Add the ground coriander, cayenne pepper, ground turmeric, and smoked paprika to the pan. Stir well to combine the spices with the pepper for about 2 minutes.
  4. Toss in the king prawns and cook until they start to turn pink and opaque, about 3-4 minutes, depending on their size.
  5. Once the rice is ready, add to the prawns along with the peas and mix thoroughly to ensure the rice is fully coated with the spice mixture and everything is evenly distributed.
  6. Squeeze the lemon juice over the jambalaya, stirring well to incorporate. Season with salt and pepper to taste.
