Courgette and Sweetcorn Fritters
One of my go-to easy meals is these Courgette and Sweetcorn Fritters for a really simple but tasty dish.

Ingredients
- 1 medium courgette, grated
- 1 cup sweetcorn kernels
- 1/4 cup flour
- 1/4 cup grated Parmesan or cheddar cheese
- 1 egg, beaten
- 2 spring onions, finely chopped
- 1 garlic clove, minced
- 1/2 tsp paprika
- 2 tbsp olive oil
Instructions
- Grate the courgette and place it in a clean kitchen towel. Squeeze out as much water as possible to prevent soggy fritters.
- In a large bowl, combine the grated courgette, sweetcorn, flour, cheese, beaten egg, spring onions, garlic, paprika, salt, and pepper. Stir until well combined.
- Heat 1-2 tablespoons of olive oil in a large frying pan over medium heat.
- Scoop small portions of the mixture (about 2 tablespoons per fritter) into the pan, flattening them slightly with a spatula.
- Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the pan and drain on paper towels. Serve hot with a dollop of sour cream, Greek yoghurt, or a fresh salad.
