Greek-Style Chicken Salad

Ingredients

  • 2 chicken breasts
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 1 bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 4 cups mixed greens
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 garlic clove, minced

Instructions

  1. Season the chicken breasts with salt, pepper and olive oil.
  2. Heat your griddle over medium-high heat until it is hot. 
  3. Cook the chicken for 3-4 minutes either side. Once cooked, remove and slice.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, minced garlic, salt, and pepper until well combined. Set aside.
  5. In a large salad bowl, toss together the cucumber, cherry tomatoes, red onion, bell pepper, Kalamata olives, mixed greens, and fresh parsley.
  6. Place the grilled chicken slices on top of the salad.
  7. Drizzle the dressing over the salad and toss gently to combine. Sprinkle crumbled feta cheese on top.
