Greek-Style Chicken Salad

Ingredients
- 2 chicken breasts
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup crumbled feta cheese
- 1 bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 4 cups mixed greens
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1 garlic clove, minced
Instructions
- Season the chicken breasts with salt, pepper and olive oil.
- Heat your griddle over medium-high heat until it is hot.
- Cook the chicken for 3-4 minutes either side. Once cooked, remove and slice.
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, minced garlic, salt, and pepper until well combined. Set aside.
- In a large salad bowl, toss together the cucumber, cherry tomatoes, red onion, bell pepper, Kalamata olives, mixed greens, and fresh parsley.
- Place the grilled chicken slices on top of the salad.
- Drizzle the dressing over the salad and toss gently to combine. Sprinkle crumbled feta cheese on top.
