Ingredients
- 300g minced pork
- 3 tbsp soy sauce
- 3 tbsp sesame oil
- 1 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 garlic clove, minced
- 1 tsp fresh ginger, minced
- 1 tsp chilli flakes
- 2 cups cooked jasmine or basmati rice (preferably day-old)
- 2 eggs, lightly beaten
- 1/2 cup frozen peas
- 2 spring onions, sliced
- 1 tbsp sesame seeds
Instructions
- Heat 1 tablespoon of sesame oil in a large pan or wok over medium-high heat.
- Add the ground pork, garlic, and ginger. Cook until the pork is browned and cooked through, breaking it up into small pieces.
- Stir in the soy sauce, hoisin sauce, rice vinegar, and chilli flakes.
- Cook for another minute, then set the pork aside.
- In the same pan, push the pork to one side. Add a little more sesame oil if needed and pour in the beaten eggs. Scramble the eggs until just set, then mix them into the pork.
- Add the remaining tablespoon of sesame oil to the pan and stir in the cooked rice. Toss to combine with the pork and eggs. Cook for 2 minutes, stirring occasionally to allow the rice to get slightly crispy.
- Add the frozen peas and spring onions, stir-frying until heated through.
- Stir in soy sauce and season with salt and pepper to taste. Sprinkle with sesame seeds and garnish with extra spring onions.
