Spiced Salmon with Tomato Couscous

Ingredients

  • 4 salmon fillets
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1/2 tsp chilli powder
  • 1 tbsp olive oil
  • 1 lemon, cut into wedges
  • 1 cup couscous
  • 1 tbsp olive oil
  • 1 tsp sumac
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Place the couscous in a bowl and pour over a cup of boiling water. Cover and let it sit for 5 minutes.
  2. In a small bowl, mix the cumin, coriander, smoked paprika, chilli powder, salt, and pepper. Rub the spice mixture onto the salmon fillets.
  3. Heat olive oil in a large pan over medium heat. Cook the salmon fillets for 3-4 minutes per side, until they are golden and cooked through.
  4. Once the couscous is cooked, stir in olive oil, sumac, cherry tomatoes, red onion, chopped parsley and then fluff with a fork.
  5. Season with salt and pepper to taste.
  6. Serve the spiced salmon fillets on top of the sumac couscous. Add lemon wedges on the side.
