Ingredients
- 4 salmon fillets
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- 1/2 tsp chilli powder
- 1 tbsp olive oil
- 1 lemon, cut into wedges
- 1 cup couscous
- 1 tbsp olive oil
- 1 tsp sumac
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 2 tbsp fresh parsley, chopped
Instructions
- Place the couscous in a bowl and pour over a cup of boiling water. Cover and let it sit for 5 minutes.
- In a small bowl, mix the cumin, coriander, smoked paprika, chilli powder, salt, and pepper. Rub the spice mixture onto the salmon fillets.
- Heat olive oil in a large pan over medium heat. Cook the salmon fillets for 3-4 minutes per side, until they are golden and cooked through.
- Once the couscous is cooked, stir in olive oil, sumac, cherry tomatoes, red onion, chopped parsley and then fluff with a fork.
- Season with salt and pepper to taste.
- Serve the spiced salmon fillets on top of the sumac couscous. Add lemon wedges on the side.
