Chipotle Pulled Pork Tacos

Ingredients
- 2 cups cooked pulled pork (store-bought or homemade)
- 1-2 chipotle peppers in adobo sauce
- 2 tbsp adobo sauce from the chipotle can
- 1/4 cup tomato sauce or passata
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tbsp olive oil
- 8 small corn or flour tortillas
- 1/2 red onion, thinly sliced
- 1/2 cup fresh coriander, chopped
- 1/4 cup crumbled feta cheese
- 2 limes
- avocado, sliced
- sliced jalapeños
- sour cream
Instructions
- In a blender or food processor, blend the chipotle peppers, adobo sauce, tomato sauce, smoked paprika, cumin, and garlic powder until smooth.
- In a large pan, heat olive oil over medium heat. Add the cooked pulled pork and pour the chipotle sauce over it.
- Stir to combine and cook for about 5-7 minutes until the pork is heated through and the sauce has thickened, coating the pork evenly.
- Heat tortillas in a dry pan for 30 seconds on each side.
- Divide the chipotle pulled pork evenly among the tortillas.
- Top with thinly sliced red onions, fresh coriander, and crumbled feta.
- Squeeze fresh lime juice over the tacos and serve with extra lime wedges on the side.
