Ingredients
- 1 can black beans, drained and rinsed
- 1 cup sweetcorn (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 avocado, diced
- 1/4 cup fresh coriander, chopped
- 1 jalapeño, seeded and minced
- 1 lime, juiced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
Instructions
- In a large bowl, combine the black beans, sweetcorn, red bell pepper, red onion, avocado, cilantro, and jalapeño.
- In a small bowl, whisk together the lime juice, olive oil, cumin, smoked paprika, salt, and pepper.
- Pour the dressing over the black bean mixture and toss everything gently to combine, ensuring the dressing coats all ingredients.
