Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup sweetcorn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup fresh coriander, chopped
  • 1 jalapeño, seeded and minced
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika

Instructions

  1. In a large bowl, combine the black beans, sweetcorn, red bell pepper, red onion, avocado, cilantro, and jalapeño.
  2. In a small bowl, whisk together the lime juice, olive oil, cumin, smoked paprika, salt, and pepper.
  3. Pour the dressing over the black bean mixture and toss everything gently to combine, ensuring the dressing coats all ingredients.
