Creamy Red Pesto Sausage Pasta

Ingredients
- 250g pasta (penne or your favourite)
- 200g sausages
- 3 tbsp red pesto
- 100ml cream
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 50g grated Parmesan cheese
- fresh basil for garnish
Instructions
- Boil pasta in salted water according to package instructions.
- In a large pan, heat olive oil over medium heat. Remove sausage casing if necessary, crumble the sausage into the pan, and cook until browned.
- In the same pan, add onions and garlic. Sauté until soft and fragrant, about 2 minutes.
- Add the red pesto to the pan and stir to combine. Lower the heat and pour in the cream, stirring gently.
- Let it simmer for 2-3 minutes. If the sauce is too thick, stir in some pasta water.
- Add the cooked pasta to the sauce and toss to coat. Stir in Parmesan cheese, salt, and pepper to taste.
- Garnish with fresh basil.
