Creamy Red Pesto Sausage Pasta

Ingredients

  • 250g pasta (penne or your favourite)
  • 200g sausages
  • 3 tbsp red pesto
  • 100ml cream
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 50g grated Parmesan cheese
  • fresh basil for garnish

Instructions

  1. Boil pasta in salted water according to package instructions.
  2. In a large pan, heat olive oil over medium heat. Remove sausage casing if necessary, crumble the sausage into the pan, and cook until browned. 
  3. In the same pan, add onions and garlic. Sauté until soft and fragrant, about 2 minutes.
  4. Add the red pesto to the pan and stir to combine. Lower the heat and pour in the cream, stirring gently. 
  5. Let it simmer for 2-3 minutes. If the sauce is too thick, stir in some pasta water.
  6. Add the cooked pasta to the sauce and toss to coat. Stir in Parmesan cheese, salt, and pepper to taste.
  7. Garnish with fresh basil.
