Ricotta Toast with Kale and Cherry Tomatoes

Ingredients
- 2 slices of your favourite bread (sourdough, multigrain, or ciabatta work great)
- 1/2 cup ricotta cheese
- 1 cup fresh kale, chopped (stems removed)
- 1/2 cup cherry tomatoes, halved
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 tsp lemon juice
- red pepper flakes
Instructions
- Toast the bread slices to your desired level of crispiness. Set aside.
- Heat 1/2 tablespoon of olive oil in a pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the kale and cook until it wilts, about 3-4 minutes. Season with a pinch of salt and pepper, and drizzle with lemon juice.
- In the same pan, add the remaining olive oil and lightly sauté the cherry tomatoes for about 2-3 minutes until they soften slightly.
- Spread a generous amount of ricotta cheese on each slice of toasted bread. Top with the sautéed kale and cherry tomatoes.
- Sprinkle a bit of salt, pepper, and red pepper flakes over the top.
