Ingredients
- 1 cup orzo pasta
- 2 chicken breasts, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 tbsp harissa paste
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1/2 cup chicken stock
- fresh parsley, chopped
- 1 lemon
Instructions
- Bring a pot of salted water to a boil.
- Add the orzo and cook according to the package instructions (about 8 minutes).
- While the orzo cooks, heat the olive oil in a large pan over medium-high heat.
- Add the thinly sliced chicken and season with salt and pepper. Cook for 3-4 minutes until browned on both sides.
- Add the red bell pepper and minced garlic. Cook for another 2 minutes until the peppers are softened.
- Stir in the harissa paste, mixing well to coat the chicken and peppers.
- Pour in the chicken stock and let it simmer for 2 minutes, allowing the sauce to slightly thicken.
- Add the cooked orzo to the pan and toss everything together to combine.
- Taste and adjust seasoning if needed.
- Garnish with chopped parsley and serve with lemon wedges.
