Easy Mac and Cheese

Ingredients

  • 2 cups macaroni (or any pasta of your choice)
  • 2 cups grated cheddar cheese
  • 1 cup milk (whole milk or 2%)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1/4 tsp garlic powder
  • 1/4 tsp mustard powder

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the macaroni and cook according to the package instructions (usually about 7-8 minutes).
  3. In another same pot, melt the butter over medium heat.
  4. Once melted, whisk in the flour to form a smooth roux. Cook for about 1 minute to get rid of the raw flour taste.
  5. Gradually pour in the milk, whisking constantly to avoid lumps. Continue whisking for 3-5 minutes until the mixture thickens.
  6. Stir in the grated cheddar cheese until it’s fully melted and smooth.
  7. Season with salt, pepper, garlic powder, and mustard powder.
  8. Add the cooked and drained pasta to the cheese sauce.
  9. Stir until the pasta is fully coated with the cheesy sauce.
  10. Serve immediately while warm and gooey. You can add extra toppings like breadcrumbs, crispy bacon bits, or more cheese.
  11. Arrange the sautéed mushrooms, soft-boiled eggs, spinach, corn, and nori around the noodles.
  12. Drizzle a little truffle oil over the top.
  13. Garnish with spring onions, sesame seeds, and additional nori.
