Ingredients

  • 1 medium cooked beetroot (roasted or boiled)
  • 1 can chickpeas, drained and rinsed
  • 2 tbsp tahini
  • 1 clove garlic, minced
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/4 tsp cumin
  • 4 slices of crusty bread (like sourdough or whole-grain)
  • 1 avocado, sliced
  • fresh herbs (parsley, coriander, or basil) for garnish
  • crumbled feta or goat cheese

Instructions

  1. In a food processor, combine the cooked beetroot, chickpeas, tahini, garlic, lemon juice, olive oil, cumin, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
  2. Toast the bread slices in a toaster or on a pan until golden and crispy.
  3. Spread a generous amount of beetroot hummus over each slice of toasted bread.
  4. Top the toast with sliced avocado, crumbled feta or goat cheese, and fresh herbs.
  5. Drizzle a little olive oil over the top for added richness and sprinkle with more herbs or a pinch of salt and pepper.
