Beetroot Hummus Toast

Ingredients
- 1 medium cooked beetroot (roasted or boiled)
- 1 can chickpeas, drained and rinsed
- 2 tbsp tahini
- 1 clove garlic, minced
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1/4 tsp cumin
- 4 slices of crusty bread (like sourdough or whole-grain)
- 1 avocado, sliced
- fresh herbs (parsley, coriander, or basil) for garnish
- crumbled feta or goat cheese
Instructions
- In a food processor, combine the cooked beetroot, chickpeas, tahini, garlic, lemon juice, olive oil, cumin, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
- Toast the bread slices in a toaster or on a pan until golden and crispy.
- Spread a generous amount of beetroot hummus over each slice of toasted bread.
- Top the toast with sliced avocado, crumbled feta or goat cheese, and fresh herbs.
- Drizzle a little olive oil over the top for added richness and sprinkle with more herbs or a pinch of salt and pepper.
