Spicy Chickpea Tacos

You should know by now how much I love a taco. These Spicy Chickpea Tacos are such a brilliant vegetarian option.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp chilli powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cayenne pepper 
  • 8 small tortillas (corn or flour)
  • 1 avocado, sliced
  • 1/2 cup red cabbage, thinly sliced
  • 1/4 cup fresh coriander, chopped
  • 1 lime, cut into wedges
  • salsa or hot sauce, for topping

Instructions

  1. Heat the olive oil in a large pan over medium heat. Add the drained chickpeas to the pan.
  2. Sprinkle chilli powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper over the chickpeas. Stir well to coat evenly with the spices.
  3. Cook the chickpeas for 5-7 minutes, stirring occasionally, until they are slightly crispy and fragrant.
  4. While the chickpeas are cooking, heat the tortillas in a dry pan over medium heat for about 30 seconds on each side, or until warm and pliable.
  5. Divide the spicy chickpeas evenly among the tortillas.
  6. Top each taco with slices of avocado, red cabbage, and fresh coriander.
  7. Squeeze fresh lime juice over the tacos for brightness and serve with salsa or hot sauce on the side.
  8. Serve the tacos garnished with extra lime wedges and your favourite taco toppings like sour cream or grated cheese.
