Spicy Chickpea Tacos
You should know by now how much I love a taco. These Spicy Chickpea Tacos are such a brilliant vegetarian option.

Ingredients
- 1 can chickpeas, drained and rinsed
- 1 tbsp olive oil
- 1 tsp chilli powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp cayenne pepper
- 8 small tortillas (corn or flour)
- 1 avocado, sliced
- 1/2 cup red cabbage, thinly sliced
- 1/4 cup fresh coriander, chopped
- 1 lime, cut into wedges
- salsa or hot sauce, for topping
Instructions
- Heat the olive oil in a large pan over medium heat. Add the drained chickpeas to the pan.
- Sprinkle chilli powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper over the chickpeas. Stir well to coat evenly with the spices.
- Cook the chickpeas for 5-7 minutes, stirring occasionally, until they are slightly crispy and fragrant.
- While the chickpeas are cooking, heat the tortillas in a dry pan over medium heat for about 30 seconds on each side, or until warm and pliable.
- Divide the spicy chickpeas evenly among the tortillas.
- Top each taco with slices of avocado, red cabbage, and fresh coriander.
- Squeeze fresh lime juice over the tacos for brightness and serve with salsa or hot sauce on the side.
- Serve the tacos garnished with extra lime wedges and your favourite taco toppings like sour cream or grated cheese.
