Chorizo and Bean Quesadilla

The Chorizo and Bean Quesadilla is an absolute winner for a midweek meal. Add some jalapeño if you’d like an extra bit of spice.

Ingredients

  • 80g chorizo, chopped
  • 80g mixed beans
  • 2 large tortillas
  • 60g cheese, a mix of cheddar and mozzarella grated
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • handful of coriander, roughly chopped
  • 1 avocado, sliced for serving
  • sour cream, for serving
  • lime wedges, for serving

Instructions

  1. In a pan over medium heat, cook the chorizo until it’s fully cooked. Remove it from the pan and set aside.
  2. In the same pan cook the onion and garlic until soft.
  3. Return the chorizo to the pan, add the beans, and cook together for a few minutes. Season with salt and pepper.
  4. Spread the chorizo and bean mixture onto one of the tortillas, sprinkle with cheese, and place the other tortilla on top.
  5. In a clean pan over medium heat, cook the quesadilla for 2-3 minutes on either side, until golden brown.
  6. Cut into wedges and serve with your choice of sour cream, avocado, lime wedges, and coriander for garnish.
