Chorizo and Bean Quesadilla
The Chorizo and Bean Quesadilla is an absolute winner for a midweek meal. Add some jalapeño if you’d like an extra bit of spice.

Ingredients
- 80g chorizo, chopped
- 80g mixed beans
- 2 large tortillas
- 60g cheese, a mix of cheddar and mozzarella grated
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- handful of coriander, roughly chopped
- 1 avocado, sliced for serving
- sour cream, for serving
- lime wedges, for serving
Instructions
- In a pan over medium heat, cook the chorizo until it’s fully cooked. Remove it from the pan and set aside.
- In the same pan cook the onion and garlic until soft.
- Return the chorizo to the pan, add the beans, and cook together for a few minutes. Season with salt and pepper.
- Spread the chorizo and bean mixture onto one of the tortillas, sprinkle with cheese, and place the other tortilla on top.
- In a clean pan over medium heat, cook the quesadilla for 2-3 minutes on either side, until golden brown.
- Cut into wedges and serve with your choice of sour cream, avocado, lime wedges, and coriander for garnish.
