Ingredients
- 4 cups water
- 2 tbsp miso paste
- 1/2 block tofu, cubed
- 1 sheet dried seaweed (nori or wakame), cut into small pieces
- 2 green onions, thinly sliced
- 1/4 cup mushrooms
- 1 tbsp soy sauce
Instructions
- In a medium saucepan, bring the water to a gentle simmer over medium heat.
- In a small bowl, take a ladle of the hot water from the saucepan and dissolve the miso paste by stirring it with a spoon until it’s smooth.
- Add the tofu cubes, mushrooms and seaweed to the simmering water. Let them cook for 2-3 minutes until heated through and the seaweed softens.
- Turn off the heat and gently stir the dissolved miso paste into the soup.
- Stir in the sliced green onions and soy sauce if you like.
