Miso Soup

Miso Soup is a comforting Japanese dish that you can prepare in just a few minutes, so it’s perfect for a simple midweek meal.

Ingredients

  • 4 cups water
  • 2 tbsp miso paste
  • 1/2 block tofu, cubed
  • 1 sheet dried seaweed (nori or wakame), cut into small pieces
  • 2 green onions, thinly sliced
  • 1/4 cup mushrooms
  • 1 tbsp soy sauce

Instructions

  1. In a medium saucepan, bring the water to a gentle simmer over medium heat.
  2. In a small bowl, take a ladle of the hot water from the saucepan and dissolve the miso paste by stirring it with a spoon until it’s smooth.
  3. Add the tofu cubes, mushrooms and seaweed to the simmering water. Let them cook for 2-3 minutes until heated through and the seaweed softens.
  4. Turn off the heat and gently stir the dissolved miso paste into the soup.
  5. Stir in the sliced green onions and soy sauce if you like.
