Ingredients
- 225g pasta (like penne or spaghetti)
- 2 cups kale, stems removed and roughly chopped
- 1 cup baby spinach
- 1/2 cup basil leaves
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 cup toasted pine nuts
- 1 lemon
- red pepper flakes
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Reserve about 1/2 cup of the pasta water.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.
- In the last minute of cooking the pasta, add the chopped kale to the boiling water. Blanch for about 30 seconds to soften. Remove the kale and set aside. Add the spinach to the bowl with the kale (no need to blanch the spinach).
- In a blender or food processor, combine the blanched kale, fresh spinach, basil, sautéed garlic, lemon juice, and half of the grated Parmesan cheese. Add a few tablespoons of the reserved pasta water and blend until smooth and creamy. Add more pasta water if needed to reach your desired sauce consistency.
- Pour the smooth green sauce back into the large pan. Add the cooked pasta and toss to combine, stirring over low heat. If the sauce is too thick, add a little more reserved pasta water.
- Stir in the lemon zest, remaining Parmesan, salt, pepper, and red pepper flakes. Toss everything together until the pasta is well-coated with the sauce.
- Plate the pasta and garnish with extra Parmesan cheese, toasted pine nuts, and a drizzle of olive oil. Serve with lemon wedges on the side.
