Chicken Fajita Salad

Ingredients

  • 2 boneless, skinless chicken breasts 
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chilli powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 4 cups mixed salad greens
  • 1/4 cup shredded cheddar
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp honey
  • 1/2 tsp cumin

Instructions

  1. In a bowl, mix the olive oil, lime juice, chilli powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the chicken breasts to the marinade, ensuring they are fully coated.
  2. Heat a grill pan over medium-high heat. Cook the chicken breasts for 4-5 minutes per side, or until fully cooked through. Once cooked, slice thinly.
  3. In another pan, add a little olive oil and sauté the sliced bell peppers and red onion for 4-5 minutes until they are softened and slightly charred. 
  4. In a large bowl or platter, arrange the mixed salad greens. Top with the sautéed peppers and onions, sliced chicken, avocado, cherry tomatoes, and grated cheese.
  5. In a small bowl, whisk together the olive oil, lime juice, honey, cumin, salt, and pepper until well combined.
  6. Drizzle the salad with the dressing and serve.
